Sajtos sült karaj


Hát ez igazán remek ötlet! Erre a  Sajtos sült karaj receptre a nosalty oldalon bukkantam. Az egyetlen “bajom” vele a liszt, de már felfedeztem, hogy ezt simán helyettesíthetem ízetlen fehérje porral, az átlagos “ragadási” faktora kb ugyanott van mint a lisztnek. (enélkül nem ragad rá rendesen a tojásos massza).  Még ha kevésnek is tűnik, de a receptben leírt 200g 150g szénhidrátot jelent!!!

Itt lehet kapni nagyon vékonyra szeletelt karajt, úgyhogy már nem is fogok bajlódni a kiklopfolással, besózom majd követem a standard mártogatást… Az egyetlen különbség, hogy a prézli helyett sajtba kell mártani a végén a húsokat.

Ilyent amúgy már próbáltam készíteni és az íze nagyon finom, de az olajban kisütve a sajt könnyen megég, leolvad és aztán az olajban folytatja az égést. Ezért is fogom megpróbálni tepsiben kisütni.

Stuffed Lemon Chicken


Ingredients

  • oil, for greasing pan
  • 8 boneless, skinless chicken breast halves
  • 1 (8 ounce) package cream cheese, cut into 1/2 inch slices
  • 1 (8 ounce) package Cheddar cheese, cut into 1/2 inch slices
  • 1 cup milk
  • 1 1/2 cups Italian seasoned bread crumbs
  • 1/2 cup grated Romano cheese (or Parmesan)
  • 1 tablespoon minced garlic
  • 3/4 cup butter, melted
  • 2 tablespoons lemon juice
  • 1/2 teaspoon garlic salt, or to taste
  • 1/2 teaspoon paprika (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly coat a large, shallow baking dish with oil.
  2. Butterfly each breast by slicing in half horizontally through the center, cutting almost but not completely through. Place one slice each of Cheddar and cream cheese in the center of each breast. Close again as if placing between the pages of a book. Set aside.
  3. Pour milk into a shallow bowl. In a separate bowl, combine breadcrumbs and Romano cheese. Carefully dip each breast first in milk, then in breadcrumb mixture, patting lightly to firmly coat. Place breasts side by side in a single layer in pre-oiled baking dish, tucking edges under to seal.
  4. Melt butter in a small saucepan over medium heat. Stir in lemon juice and garlic, and drizzle evenly over chicken. Season breasts with garlic salt and paprika, if using.
  5. Bake in preheated oven for 30 minutes, or until no longer pink in center and juices run clear.

Smoked Bacon Wrapped Onion Rings


Ingredients

  • • 1 pack Bacon
  • • 4-5 Sweet Onions
  • • 2 T Black Pepper
  • • 1/2 cup Sriracha Hot Sauce
  • • 2 T Mayo
  • • 1 tsp Lime Juice

Instructions

  1. 1. Cut onions into 1/2 inch thick rings and pop the internal rings out until you have a nice sturdy onion ring.
  2. 2. Brush onion with hot sauce.
  3. 3. Wrap each onion ring with bacon and secure with a skewer or toothpick.
  4. 4. Heavily cover the onion rings with pepper and smoke, grill or bake for about 90 minutes at 250-350 degrees.
  5. 5. To make the spicy sriracha mayo, combine 2 T of mayo, 1 T of sriracha sauce, and 1 tsp of lime juice. Mix well.

Ismét találtam egy receptet amit érdemes lesz kipróbálnom… Ehhez nyilván megint be kell szerezzek mandula lisztet, mert már nagyon kevés van itthon, így félre teszem a receptet és remélhetőleg nem felejtem el 😀 A recept angolul van…

Almond Crusted Keto Quiche

Quiche Crust

  • 1 1/2 Cup  Almond Flour
  • 1/4 Cup Olive Oil (+1 tsp. if needed)
  • 1 tsp. Dried Oregano
  • 1/4 tsp. Salt

Quiche Filling

  • 6 Large Eggs
  • 1 1/2 Cups Cheddar Cheese
  • 1 Green Bell Pepper
  • 6 Slices Bacon
  • 1 tsp. Garlic
  • 1 tsp. Mrs. Dash Table Blend
  • 1/2 tsp. Pepper
  • 1/4 tsp. Salt

Elkészítése:

1. Preheat oven to 350F.

2. Cut 6 slices of bacon into chunks and put them in the pan to cook.

3. While the bacon is cooking, add 1 1/2 Cup  Almond Flour, 1 tsp. Dried Oregano, and 1/4 tsp. Salt to a mixing bowl.

4. Add 1/4 Cup Olive Oil to the dough and mix it in.

5. Using your hands, roll the dough into a ball. If you need to, add 1 tsp. more olive oil to get the consistency right.

6. Spread the dough out into an 11×7 casserole dish, trying to get it as even as possible.

7. Bake the crust for 20 minutes. You don’t want to have it fully cooked – just enough for it to stick together. It will continue cooking after you add the egg filling.

8. Remove your bacon from the pan and set on paper towels to cool.

9. Dice 1 Green Bell Pepper and measure out 1 tsp. Garlic.

10. Add the bell pepper and garlic to the bacon fat to cook.

11. In a measuring jug, crack 6 eggs and scramble.

12. Add the 1 1/2 Cup Cheddar Cheese, Green Bell Pepper, Garlic, Bacon Fat, 1/2 tsp. Pepper, and 1/4 tsp. Salt.

13. Mix all the ingredients together until fully mixed.

14. Add your bacon to the mixture and continue mixing until well distributed.

15. Pour the bacon and egg mixture into the crust and spread out as needed.

16. Bake the quiche for 15-18 minutes at the same temperature (350F) until the center is firm. You can optionally broil to top for 3-5 minutes until golden brown.

17. Let quiche cool and cut into slices. The first piece if normally the piece I have to “ruin” where the crust gets messed up. Use a silicon spatula to remove the rest of the pieces.

Jalapeno Bacon Stuffed Chicken


Jalapeni-Stuffed-Chicken1

2 large, raw, boneless chicken breasts
8 ounces cream cheese, softened
8 slices jalapeno, chopped
3 slices bacon, chopped
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp onion powder

Remove membranes from chicken.  Carefully cut a slit in the side/top of the chicken to form a pocket the length of the chicken. Brine chicken in 2 Tbsp olive oil and 1.5 Tbsp lemon juice for an hour.

Combine softened cream cheese with jalapeno, bacon, pepper, garlic and onion. Secure closed with a toothpick if it makes you feel more comfortable.

Grill chicken for 12 minutes per side, or bake in a 325 degree Fahrenheit oven for 45 minutes.

Makes 2 large chicken breasts, or 4 servings.

Oopsie Paninis


Oopsie-Panini

4 eggs, separated
4 ounces cream cheese
1/8 tsp cream of tartar
1 packet splenda

*Roasted vegetables (see recipe below)

Preheat oven to 300 degrees.

Grease jelly roll pan, or line with parchment paper or silpat.

With a mixer, whip egg whites with cream of tartar until stiff peaks form. In another mixing bowl, mix yolks with cream cheese and Splenda until just blended. Carefully fold yolk mixture into the whites.

Pour into prepared jelly roll pan. Bake until springy and dry, about 30 minutes.

Cut Oopsie “bread” into 16 pieces.

Stack with roasted vegetables*, goat cheese, kalamata olives and a few slices of leftover turkey tenderloin or other thin-sliced meat you may have.

* Roasted Vegetables

Preheat oven to 450F.

Drizzle 2 tbsp olive oil on a jelly roll pan.

Add roughly chopped one of each:

  • red pepper
  • green pepper
  • orange pepper
  • banana pepper
  • a few slices of red onion
  • 1 tbsp each of fresh herbs (parsley, thyme, oregano)
  • salt and pepper
  • 1/2 tsp fennel seed

Toss it up and roast for 30 to 40 minutes.
